Classic Vanilla Cake Recipe

Ingredients:

  • 1.5 cups (180g) all-purpose flour

  • 1 cup (200g) sugar

  • 2 large eggs

  • 1/2 cup (120ml) vegetable oil

  • 1/2 cup (120ml) milk

  • 2 tsp vanilla extract (or seeds from 1 vanilla bean)

  • 1.5 tsp baking powder

  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 180°C (350°F). Grease and line a round 8-inch pan.

  2. In a bowl, whisk flour, baking powder, and salt.

  3. In another bowl, beat eggs and sugar until pale. Whisk in oil, milk, and vanilla.

  4. Gradually add dry ingredients to wet, mixing just to combine.

  5. Pour batter into the pan. Bake 25–30 minutes, until golden and a skewer comes out clean.

  6. Cool, then frost or enjoy plain.
